This is superb - typical Heathcote power and density, but with a lovely perfume and just the right amount of elegance. The fruit is from a single vineyard called Colbinabbin, which is gaining prominence in Victoria wine circles as the source of fantastic Shiraz. This really delivers. Aromas of blackberry and plum, with a touch of rose petal. The palate has black cherry, more plum, cinnamon and anise spice. Fine powdery tannins, fleshy texture and well integrated oak add complexity.
Santa & D'Sas was established in 2013 but the team behind it had known each other for years prior. Andrew Santarossa (SANTA) and Matthew Di Sciascio (D’SAS) met during their formative years of university. Sue Di Sciascio keeps the guys in line and is responsible for the design of the labels, amongst other things, of the different tiers of wines that are created by the gents. With a many years shared studying, lots of long lunches and wine “tastings”, the inevitable happened and the decision to jump into wine production was made. With the task of sourcing fruit at hand they have found vineyards in top tier territories. Each location brings different qualities but their idea is to focus on cool climate areas. Currently they are sourcing varieties such as Chardonnay, Pinot Gris, Sangiovese and Pinot Noir. Fruit sources are all in Victoria and at this stage include King Valley, Yarra Valley, Henty, Geelong and Heathcote but they always are on the look out for more amazing fruit.

This Shiraz from the ever-reliable Santa & D’Sas is a great example of the depth of flavour this grape consistently gives, making it a real favourite at dinnertime. As with most Shiraz, it’s an absolute banger when it comes to food pairing. As with most Shiraz, it’s big hunks of charred meat that this wine likes to be drunk alongside, so get down to the butchers, fire up the barbie, and get your mates over pronto. While this is most obviously wine which is made for beef, and especially the cheaper, fattier cuts like brisket or slow cooked stewing steak, it’s also great with other rich meats, and there’s still plenty to delight the vegetarians among you, too. This Shiraz is also going to be lovely when enjoyed alongside all kinds of charred, roasted, or grilled veggies, robust bean dishes, spiced lentil burgers, or hard cheeses like Cheddar or an aged Gouda.

The Heathcote wine region is located in central Victoria and until the 1980’s it was broadly known as part of Bendigo. The region itself is famous for the ancient cambrian soils which date back 500-600 million years which characteristically have a rusty, iron colour and have good moisture retention which is ideal for this warm region. Heathcote is well suited to Shiraz and Grenache as well as newly introduced varieties like Fiano and Nero D’Avola.
