Details
The blend of Cabernet and Shiraz is classically Australian, and is a style that was launched in the 1950s and 60s to great acclaim. Though not as popular now as it once was, it still ties in all that s great about elegant but powerful Australian reds. This bottle is just lovely - solidly built, with a nice fruit perfume that shows blueberry, lavender and redcurrant. There's some notes of hedgerow and leather in there, along with a touch of oak spice. It has a soft texture, but the fruit tannin comes through on a gravelly finish. Great stuff.
Risky Business is a collaboration between grape grower and viticulturist Rob Quenby and vintner John Waldron. Both with significant experience in the wine scene, they came together in 2013 to produce small batches of fine and distinctive wines from varied areas across Australia. The Western Australian grapes come from Rob’s vineyards, managed by his own viticultural company, whilst they also look to Victoria's King Valley for some fruit. They're not looking to reinvent the wheel, rather to source great fruit from established vineyards and fashion stylish and traditional wines that have a modern edge. They seek fullness of flavour and depth, with a mixture of varieties at play. This is something they're committed to attaining, and the resultant wines certainly show better for it. Whether it be their classic re-interpretation of the Aussie Cabernet Shiraz blend, or their juicy and vital Riesling, their selection of wines is a lovely introduction into the modern Australian wine scene.

Pairing guide
The pairing of Cabernet Sauvignon and Shiraz is a match made in heaven, and one that just keeps on impressing. In this gorgeous wine, the two grapes come together to produce something as intense and flavourful as it is boisterous and powerful… and the results are totally stunning. This is a wine which can stand up to some seriously strong flavours; don’t be afraid to pair it up with blue cheese starters, game meats, rich, juicy homemade beef burgers, sticky ribs, or pretty much anything deeply savoury in a meat, tomato and garlic sauce. It’s also a great pairing for wild mushrooms, grilled eggplant, and umami-rich lentil dishes, too.
