Wines made from Fiano are beginning to appear more and more often in Australian glasses, and from this example, it is easy to understand why. It always manages to walk a tightrope between richness and freshness, with a subtle waxy texture and chalky minerality, all backed up by crunchy green-apple acidity. This is medium bodied, saline and has heaps of green pear and ripe apple.

Laura and Brendan Carter are on a mission - to make delicious, Australian beverages in a sustainable way and create a thoroughly modern business in the process. Their winery, Unico Zelo is a winery with attitude. We love them, and think you should too. For that reason, we teamed up with them to make a couple of wines that we love, and think you will too! The philosophy of Unico Zelo is to show the world just how varied Australian wine can be, and how flexible and forgiving the fascinating soils of South Australia can be. Their deeply-flavoured wines are inspired by some of the great, powerful wine regions of the world, but Laura and Brendan like to put their own stamp on things. Thus, New Disco was born. New Disco celebrates a modern winemaking approach that focuses on growing the best grapes for our difficult and changing Australian climate, in the most sustainable fashion, to create new takes on established grapes. The wines are moderate in alcohol and taste delicious - take on for a spin.

Fiano has to be one of our all-time favourite food pairing wines, and this fun and spritely number from New Disco is no exception. We love pairing this wine with raw or grilled fish and shellfish, and back in its spiritual home on the Italian coast, that’s exactly what the locals eat with this bright white wine. However, it’s quite a versatile little number, and will work well with fresh tomato dishes, pork, veal, and chicken, too, especially when served with butter or cheese sauces.
