Details
Tart red currant, rhubarb and strawberry come together in a very refreshing, rounded and appetising fashion. The frothy, foaming mousse is exuberant and highlights these strawberry shortcake flavours brilliantly, while a totally dry palate makes sure that this stays classy. This is very satisfying, fun and fruit-driven, with a serious core and a bright, lemony finish.
Australia boasts some pretty historical vineyards, some over 150 years old! We have wineries that have been in operation for over 100 years as well. We've been doing quality wine for decades.....but it didn't start with us. Some European wineries have sheds that are older than our oldest winery! Case in point - Maison M de Ligny, who farm some vineyards that were originally planted in the 1100s! (Obviously they have been replanted now....but still). Having made quality wines from the Burgundy region for generations, M de Ligny have got the art of it down pat. They specialise in Chardonnay and Pinot Noir (as befits the region) but in recent times have expanded to quality sparkling wine and other varieties. Their mix of tradition and innovation is a real benchmark in the region, and is a real testament to the approach of the winery in the modern era. Elegance and delicacy are hallmarks of their wines, with a soft touch, fine fruit and a real poise to the entire offering.

Pairing guide
This beautiful blushing sparkling wine from France is spectacularly delicious, and absolutely ideal for pairing with a stunning range of different foods. On the one hand, you could pair this wine perfectly with any dessert involving plenty of berries, cream, and chocolate for a romantic match made in heaven. On the other, this bubbly is also going to pair up fantastically with chicken or veal schnitzel (frankly, any fried and breaded meat is going to be amazing!), creamy risottos featuring butter and parmesan, and salt cod, too.

Wine region

Burgundy, France
Burgundy is located east between Paris and the Swiss border and is known for producing some of the finest and most sought-after wines (Chardonnay and Pinot Noir) in the world. The region can be divided into the following sub-regions from north to south: Chablis, Côte d'Or, Côte Chalonnaise, and Mâconnais, with parts Beaujolais to the south now under consideration.
Chablis is located north of the Côte d'Or and is known for its crisp, dry white wines made from Chardonnay, made without the influence of oak. Some of the best domaines in Chablis include William Fèvre and Christian Moreau.
The Côte d'Or is the heart of the Burgundy wine region and is divided into two main areas: the Côte de Nuits and the Côte de Beaune. The Côte de Nuits is known for its red wines, while the Côte de Beaune is known for its white wines. The best domaines in the Côte d'Or include Domaine de la Romanée-Conti and Domaine Georges Roumier!
Mâconnais and often overlooked Côte Chalonnaise produces red and white wines. Some of the best domaines in these regions include Domaine Bouchard Père et Fils and Domaine Jean-Jacques Girard.
