For fans of Chablis styles this is a great example of Aligote. From eighty year old vineyards around Morey-Saint-Denis fruit is hand picked and sees minimal oak treatment. Displaying bright grapefruit, crushed rock and delicate blossom notes on the nose. A pure fruit expression on the palate with a gentle nuttiness. Racy and light bodied on with long bright finish.

Found smack bang in the middle of one of the most famous villages in one of the most famous regions in the world you will find Domaine Pierre Amiot. Located in Morey-Saint-Denis, this domaine is now run by brother Jean-Louis and Didier Amiot, who are the fifth consecutive generation to be tending to the vineyards and barrels. With amazing holdings of Grand Cru and Premier Cru locations the style of the wines are often describe as pure and elegant. Much more concerned with healthy vineyards than promotion or marketing the wines created here are some what insiders knowledge although they are highly regarded locally. Healthy vineyards are the focus and they do so sustainably over all of their eight hectares, which is divided over 40 plus holdings. Low yields are key to the quality of their wines along with a near total rejection of fertilisers and pesticides which they feel damages the health of the veins and soils in the long term.

Fresh, bright, acidic and zesty, Aligoté is a fantastic food-pairing wine, and one which has a rich tradition being matched up with tempting cheese boards and light bites in its native France. This wine is particularly good with delicate white fish dishes (bass and sole, especially), and works well with pretty much any light and crisp salad you can think of. Alternatively, you can get great results pairing Aligoté with vegetable soups and light chicken or fish broths, and you can’t go wrong with anything containing a decent brie or camembert. Delicious!

Burgundy is located east between Paris and the Swiss border and is known for producing some of the finest and most sought-after wines (Chardonnay and Pinot Noir) in the world.
