Details
So often, rosé is considered as an afterthought by winemakers with grapes that aren't ripe. But Susan and Michael Papps have instead aimed for the rosé stars using grapes grown for pink wine from the start. Crafted using Cinsault and Mourvédre, this is what the Papps call a 'gastronomic rosé' with this unreal combo of pink grapefruit and savoury herbs, yet with these lovely, gentle edges. Yum

There's a saying in the Barossa: "You have to have a grandparent in the ground before you're considered a local." Well, Susan Yelland and Michael Papps don't fit this criteria, but 20 years of experience growing grapes and producing delicious wines in the area has made them the envy of many a so-called 'local'. It must be said as well, with a delightful cellar door that offers a warm and cosy atmosphere, the locals are usually found here enjoying some Barossa smallgoods and a glass of wine on a weekend afternoon. They're passionate about running their small winery sustainably, using minimal inputs during the winemaking process to allow the fruit to speak in a clear voice, uncluttered by overzealous oak and a heavy hand. And they must be doing something right because they've been rated one of the best new wineries representing the 'New Barossa'!

Pairing guide
With a 'gastronomic' rosé like this one, the world is your pairing oyster as you can really match it with whatever you like. Fresh and even more complex salads would be a first choice option here, especially with a rich dressing, with salmon or fish dishes that use some herbs and spices, grilled or even fried vegetables more likely and very welcome matches. Then again, you could just crack this over brunch and pair it with friends too!
