Details
Just picture yourself walking into the Wills Domain winery and taking a left into the barrel hall where you are hit with the glorious scent of oak mixed with wine. This delightful Chardonnay will give you a great idea what it is like to do so with a nice lick of butterscotch and cashew balanced by nectarine and lime. We think this deserves a couple of years shoved behind the other bottles or drink without too much time in the fridge.

The Margaret River has been one of Australia’s shining beacons in the wine industry since it exploded onto the scene with award winning wines in the 1970s. Interestingly, the region was kickstarted by a report by John Gladstones, a scientist who identified the region as a prime area for growing grapes. Today, Margaret River has international recognition and thanks to wineries like Wills Domain, there are plenty of wines for all to enjoy. Wills Domain was started by Darren Haunold in 2000, and one could say that this was inevitable with the Haunold family having connections to the wine industry since 1383 in Europe. The four labels that they have all link back to the history or stories of the family, whether it be eightfold which is the eight generations of winemakers in the family or Paladin Hill which is named after the famed knights. The winery today is a sprawling estate with cellar door and restaurant that is worth the visit!

Pairing guide
With its racy character and lush flavours, this Chardonnay from Yallingup Estate is sure to satisfy the senses. We love this wine with the aromatic flavours of smoked salmon, and it’s also a fabulous wine for serving alongside scallops, white crabmeat, lobster, and funkier shellfish like clams and mussels, too. Richer fish and pork dishes, featuring creamy and buttery sauces, will hit the spot nicely, and it’s going to be fantastic with simple pasta dishes and ravioli of white meats or pumpkin.
