Wills Domain has produced a stellar premium range of wines with all the bells and whistles thrown at them. Their Margaret River ‘Paladin Hill’ Shiraz is bursting with pristine blueberries entwined with cloves and white pepper which together have produced a wine that shows the strength of this variety in Margs. There is a luscious layer of oak that adds silky spice as well.

The Margaret River has been one of Australia’s shining beacons in the wine industry since it exploded onto the scene with award winning wines in the 1970s. Interestingly, the region was kickstarted by a report by John Gladstones, a scientist who identified the region as a prime area for growing grapes. Today, Margaret River has international recognition and thanks to wineries like Wills Domain, there are plenty of wines for all to enjoy. Wills Domain was started by Darren Haunold in 2000, and one could say that this was inevitable with the Haunold family having connections to the wine industry since 1383 in Europe. The four labels that they have all link back to the history or stories of the family, whether it be eightfold which is the eight generations of winemakers in the family or Paladin Hill which is named after the famed knights. The winery today is a sprawling estate with cellar door and restaurant that is worth the visit!

If that sounds like you, this Shiraz from Wills Domain is sure to satisfy - it’s fabulous with roast beef, whole roast turkey and leg of lamb studded with garlic and rosemary. Even if that’s not your thing, you’ll get equally good results pairing this wine with an Aussie Christmas barbecue, especially if homemade burgers and spicy ribs are on the menu. Bean stews, lentil sides and cheese-stuffed mushrooms are also highly recommended here.
