This is a classical Semillon with all its beautiful lemon curd and hay notes for all to see. The beautiful thing about Semillon is it is the perfect balance of texture and acidity and there is plenty of both in the Eightfold Semillon from Wills Domain. The wine has a touch of oak influence with some nice spice and woody aromas and although it can be drunk now, we recommend hiding this for a couple of years as well.

The Margaret River has been one of Australia’s shining beacons in the wine industry since it exploded onto the scene with award winning wines in the 1970s. Interestingly, the region was kickstarted by a report by John Gladstones, a scientist who identified the region as a prime area for growing grapes. Today, Margaret River has international recognition and thanks to wineries like Wills Domain, there are plenty of wines for all to enjoy. Wills Domain was started by Darren Haunold in 2000, and one could say that this was inevitable with the Haunold family having connections to the wine industry since 1383 in Europe. The four labels that they have all link back to the history or stories of the family, whether it be eightfold which is the eight generations of winemakers in the family or Paladin Hill which is named after the famed knights. The winery today is a sprawling estate with cellar door and restaurant that is worth the visit!
