This is the top-shelf Shiraz from Wicks, and it's a carefully crafted red. There's a lovely blend of plush blackberry and ripe blue plum, along with some cool climate mint and pepper. Think of this like a half-and-half wine - both spicy and generous, all at once!
The Wicks family has a farming history in the Adelaide Hills that dates back to 1919, with L.J. Wicks establishing an orchard and fruit tree nursery to cater to returning soldiers eager to transition into agriculture following WWI. As is the case in the Adelaide Hills, the farms are a mix of Apple orchards, the occasional cherry tree, and rows of vines. It wasn't until 1999 that the current generation brothers Tim & Simon Wicks decided to diversify into premium wine and keep the apples for the kids. Over the past twenty-five years, the Wicks have built one of the largest independent wineries in the Adelaide Hills, where they produce wines from a host of small vineyards, while establishing a reputation with Shiraz, Pinot Gris, Sauvignon Blanc, and Pinot Noir (in particular) from their own vines.

Choosing a wine pairing with spicy Shiraz like this is actually super easy - you just need to dial in a little spice to match! The Wicks family think this works best with a minted lamb rack and roasted vegetables, which we won't argue with at all. BBQ sausages or spiced eggplant would work wonderfully here too, as would anything with a richness and smoky spice edge.
