Details
This rosé is made from Cab Sav and is vibrant, crisp, and irresistibly fragrant! Aromas burst from the glass - wild strawberry, pomegranate, raspberry sorbet, and hints of blood orange. On the palate, the wine is dry and zesty, offering bright red berry flavours supported by refreshing acidity and a silky, mouth-watering texture. A touch of watermelon rind and white peach adds charm and juiciness without sweetness. This is a refreshing, modern rosé built for sunshine drinking but layered enough to impress year-round.
Vinifera is a proudly organic winery in the Mudgee region of NSW. Set up in 1994 by doctor Tony McKendry and his wife Debbie, they were drawn to the region's potential by the discovery that the local environment had striking parallels with Spain’s most famous wine growing region; Rioja. Thus, some of the first Tempranillo vines in Australia were planted along with Chardonnay, Cabernet Sauvignon and Semillon. The vineyard has continued to mature beautifully and now stretches across 12 hectares producing limited vintages including other striking Spanish reds. For years they have been ably assisted in the winery by Jacob Stein, part of the famous Mudgee winery Robert Stein. With Tony guiding the viticulture and overall style of the wines, and Jacob applying his local and international winemaking knowledge, they produce a range of wines that reflect the local land as well as being succulent and adaptable with food. A bit of a hidden gem Vinifera, but well worth seeking out!

Pairing guide
The 2024 Vinifera Rosé is wonderfully versatile and adapts effortlessly to a broad spectrum of dishes. Its vibrant red-berry character makes it a stellar match for Mediterranean classics: think grilled octopus with lemon, tomato and basil bruschetta, or a fresh niçoise salad. It works brilliantly with charcuterie and soft cheeses like burrata or creamy feta. The wine’s acidity cuts neatly through fatty or salty elements while enhancing delicate, fresh ingredients. Spicy foods are particularly rewarding pairings. Try Thai chicken larb, tuna tartare with chilli and lime, or Mexican dishes like shrimp tostadas or fish tacos with pico de gallo. The wine’s juicy fruit softens spice while its dryness keeps everything in balance.
