Made from local western Loire grape variety Melon de Bourgogne, this sparkling wine is made biodynamically.
It is superbly light and fresh, with no dosage (added sugar), and has bright aromas of lime zest and daisies, whilst the palate is succulent, citrussy and saline.
It’s hard not to be charmed by Vincent Caillé, and indeed, if you were to Google his name right now, you’d come across no shortage of articles seemingly written by blushing schoolgirls, swooning over his Gallic good looks, dark curls, and knitted jumpers. We could follow a similar route (seriously, it’s tempting…) but right now, let’s focus on his vino and what makes that stand out from the crowd. For make no mistake, few newcomers to the wine scene have made quite such waves as he has in recent years, and if you haven’t yet explored the output of this young Frenchman, it’s high time you began! Caillé is a 5th generation winemaker, and he was fortunate enough to inherit a whole bunch of vineyards in a lesser-known corner of the Loire, in which he was encouraged to let his imagination run riot. While this could have been a recipe for disaster for some over-eager young guns, the weight of his ancestry clearly took hold of Caillé, and he quickly set about demonstrating a truly natural flair for viticulture. Before long, he was releasing critically-acclaimed organic wines which more than lived up to the expectations surrounding his pedigree, and he hasn’t slowed for a second since. Recently, he’s considerably expanded his number of hectares, and has been branching out into new varietals and wine styles. Not just a pretty face, after all!

This sparkling wine is a real treat for the senses, and when paired with some delicious homemade food, it’s sure to become a brand new favourite you’ll be telling your mates all about! We love to match this bubbly with the kind of comfort food you wouldn’t necessarily think to pair with sparkling wine - buffalo chicken wings, pizza, mozzarella sticks etc - there’s something brilliantly naughty about the juxtaposition of luxurious vino and fried food we can’t resist!
