Details
The Reserva Chardonnay from the Indómita team is a more complex iteration of Chardonnay with some toasty oak at play, plenty of depth of flavour along with plenty of lemon, nectarine and kiwi notes. The oak comes across on the palate as well with some chewiness to boot.
Viña Indómita is located in the heart of Chile wine country, with their winery located in the wine region of Casablanca as well as owning vineyards in the Central Valley region of Maipo. Casablanca is located in between Valparaiso and Santiago with stunning views of the Pacific Ocean, where you will find plenty of Sauvignon Blanc, Chardonnay and Pinot Noir planted in this maritime dream. The Central Valley, by comparison, is a garden of Eden, with fertile soils perfect for producing a wide range of fruit and vegetables to feed the nation as well as supplying plenty of land ideal for vineyards. Viña Indómita have several labels and GPD are keen to introduce you to their main Indómita range where they focus on local varieties like Carménère as well as all the usual suspects from Sauvignon Blanc to Merlot. The winery is relatively new to the game, however that hasn’t stopped them focusing on tourism and wine tastings in the region.

Pairing guide
The team at Indómita continues to impress with their winemaking talents, and this beautiful Chardonnay is a great example of what they do best. Crisp and luxuriant in equal measure, this white wine is the perfect pairing for cheesy pasta dishes, roast poultry, fish ‘n’ chips and other richer fish dishes, as well as buttered lobster tails and seared scallops. We also loved this wine with a creamy Thai or Indian curry made with coconut milk or cashews, and it’s not half bad with veggie tacos with avocado and seitan, or grilled prawn skewers and crispy tofu. Yum!
