The trick to this rosé is a little more work in the winery. Tom makes this wine using 'full solids', which is when the ferment happens with all the skin and pips and juice altogether. It's what normally happens with red wines, but it's a high-wire act to make sure you don't end up with some heavy, dark-coloured rosé though! Lucky Tom is all over it, with this pale and crisp Sangiovese rosé ending up with an ideal balance of light red raspberry fruit, and a crisp, slightly citrusy palate.

The name started off as a bit of a joke, joining the first two letters of each of their names together. But now, with the bottles out and the wines to show, it feels right. As the couple describe it, these are wines from Mudgee that are 'approachable, fun, unpretentious and always up for a good time'. Tom has a day job as a winemaker at Pieter van Gent wines in Mudgee, making typically more classical styles (and a dazzling array of fortified and full-bodied reds). With the Teto wines, he's off on a more modern and fresh tangent, using alternative varieties with minimal intervention. We're super proud to have some of Tom & Tenille's first-ever releases at Good Pair Days!

There’s no getting away from the fact that this wine definitely hits the high notes of flavour and distinction, and it’s a glorious choice for pairing with classic Mediterranean dishes of seafood, fish, pork, lamb, chicken, vegetables and more. This wine loves garlic, will match up beautifully with olives, and will be very happy alongside a simple dish of grilled sardines on toast, or something fancier like salmon en croûte, gala pies, and a salade Niçoise.
