Details
As the name suggests, this wine needs some time in the fridge before opening. Drunk chilled, this is bright and bunchy with cherries for days and a nice crunchy and tea-like tannin structure that lingers. Think of this as grown-up iced tea, something that you could have with ice cubes or with a colourful beach towel (GPD coral) and a wedge of watermelon.

Taschini Wines (tas·chi·ni) is the work of Matilda Innes, which expresses a range of bright and modern wines that are a far cry from the wines that usually come out of the Coonawarra, where she plies her craft. Matilda is the daughter of John and Melissa Innes, of Ottelia Wines, who have long been a favourite of Good Pair Days. Ottelia are far from stuffy Coonawarra reds, with a flair for showcasing the full depth of the Limestone Coast, and you can see the influence of this philosophy in Matilda’s wines. The Taschini range is a small, intimate selection of wines, all made with attention to detail and purpose: a white wine sourced from Mount Gambier, a perfect chilled red, and, lastly, a modern take on the Coonawarra Cabernet. The wines are fun and designed to be shared with friends and family over delicious food, which helps that Matilda’s husband is the chef at the Ottelia restaurant. Enjoy them while they last!

Pairing guide
Bright, juicy, and full of red cherry and dried herb character, Sunny is a natural at the table. Pair it with tomato-based dishes such as pasta pomodoro, lasagne, or wood-fired pizza. It’s equally at home with grilled sausages, roast chicken, or antipasto platters loaded with cured meats and olives. The lively acidity also makes it a great match for vegetarian dishes like eggplant parmigiana or lentil ragù, easy, rustic, and deeply food-friendly.

Wine region
Limestone Coast, Australia
The Limestone Coast is a large wine zone in the south-east of South Australia which has six wine regions that comprise the Limestone Coast; Coonawarra, Mount Benson, Mount Gambier, Padthaway, Robe and Wrattonbully. The Limestone Coast is in a unique position with cool winds and ocean waters throughout the summer months thanks to an oceanic event called the Bonney Upwelling which helps keep the vineyards cool during the hot summer months. The Limestone Coast produces a wide range of quality wines from classic Cabernet Sauvignon and Shiraz in Coonawarra to cool-climate varieties like Chardonnay and Pinot Noir in Robe and Mount Gambier. It is truly a versatile area and one of the backbones of the Australian wine industry.
