Details
Cabernet Sauvignon wasn't always meant to be aged in oak and kept in a cellar. Why should Grenache and Gamay have all the fun while poor old Cabernet Sauvignon gets left in the dark? Taschini Wines have solved that with the 'Bunchy', which is pedigree Coonawarra Cabernet Sauvignon made to be drunk in the sun instead of a musky old dining room. Dark cherries, blackberries and a bright, crunchy mouthfeel, we can guarantee Cabernet has never looked so different.
Taschini Wines (tas·chi·ni) is the work of Matilda Innes, which expresses a range of bright and modern wines that are a far cry from the wines that usually come out of the Coonawarra, where she plies her craft. Matilda is the daughter of John and Melissa Innes, of Ottelia Wines, who have long been a favourite of Good Pair Days. Ottelia are far from stuffy Coonawarra reds, with a flair for showcasing the full depth of the Limestone Coast, and you can see the influence of this philosophy in Matilda’s wines. The Taschini range is a small, intimate selection of wines, all made with attention to detail and purpose: a white wine sourced from Mount Gambier, a perfect chilled red, and, lastly, a modern take on the Coonawarra Cabernet. The wines are fun and designed to be shared with friends and family over delicious food, which helps that Matilda’s husband is the chef at the Ottelia restaurant. Enjoy them while they last!

Pairing guide
Structured yet vibrant, Bunchy Cabernet offers dark-fruit richness, leafy freshness, and fine tannins, thanks to whole-bunch fermentation. It pairs beautifully with grilled or roasted red meats, think lamb cutlets, beef skewers, or a classic roast. Earthy dishes such as mushroom pie, lentil stew, or roasted beetroot also complement it. For cheese, choose aged cheddar or hard sheep’s-milk styles. This Cabernet rewards hearty food without feeling heavy.

Wine region

Coonawarra, Australia
Coonawarra is in the southeastern corner of South Australia, located in the Limestone Coast of South Australia, about 300 km southeast of Adelaide. The region experiences a maritime influence due to the upwelling of cold ocean currents. The main varieties grown in the region are Cabernet Sauvignon, Shiraz, Merlot, and Chardonnay. Here you can find the legendary terra rossa soil, with its thin iron-oxide-based topsoil over limestone, giving it that unmistakable reddish hue. This soil type is believed to be a major contributing factor to the robust character of the wines.
The Coonawarra wine region stretches about 15 km, with more than 50 wineries. Penfolds, Wynns, Balnaves, Rymil and Katnook Estate are among the most notable and historic in the region. Each of them produces highly sought Cabernet Sauvignon that is medium to full-bodied, with brood notes of cassis, blackberry, plum and dark cherry flavours. Structured with firm but plush tannins, the very best of them cellar gracefully for decades.
