Details
This undiluted genshu hits with bold character and warmth, offering rich notes of steamed rice, ripe banana, and a whisper of chestnut. Made from Miyagi’s local Hitomebore rice, it’s got a creamy texture and a punchy 16% ABV, but balances beautifully with a dry finish and a flicker of acidity. It’s full-bodied, flavourful, and confidently mellow.

Taiwagura Shuzo is a relative newcomer, but with old soul energy. Though the brewery itself was founded in 2011, it’s a revival of a long-dormant brewing tradition in Taiwa Town, just north of Sendai. Surrounded by forested hills and blessed with pristine underground water from the Ōu Mountains, Taiwagura brings a modern take on classic sake. They focus on clean, expressive junmai styles with bright acidity and a soft, smooth finish - perfect for both sake newbies and seasoned drinkers. With a philosophy rooted in balance and drinkability, Taiwagura is steadily earning a name for itself as a rising star in the Miyagi sake scene. Look out for their subtle umami notes and food-friendly profiles - ideal for pairing with anything from sushi to grilled vegetables.

Pairing guide
This sake’s full-bodied depth and richness make it a natural partner for dishes with bold umami. Think grilled miso-marinated salmon, soy-glazed eggplant, or Korean BBQ short ribs. Its higher alcohol and creamy mouthfeel cut through oil and fat beautifully, while the subtle sweetness plays off charred or caramelised edges. For a surprising but dreamy match, try it with a wedge of aged Gouda or even blue cheese - salty, funky, and absolutely in sync.
