Details
Resplendent with aromas of strawberries and cream on a summer’s day layered over raspberries and rose petals, this rosé made from Shiraz grapes is juicy with acidity, and crisp and dry with a mineral freshness. It’s super juicy, with a creamy mid-palate structure. Who needs Provence when you have this right here at home? No added preservatives, sunshine in a bottle!

We love being just slightly ahead of the curve here at Good Pair Days, so when the opportunity came to collaborate with Aaron Mercer on a range of preservative-free wines, we jumped at the chance! Aaron is one of NSW’s most versatile and awarded winemakers, and he’s also a genuinely great guy! With his own label Mercer Wines based in the Hunter Valley, and as part of the trio of Maker, Master and Merchant wine gurus, Aaron boasts extensive experience working not just around the wine regions of Australia, but also in France, Germany, Canada and California. Importantly, Aaron is best known for his positive impact on sustainability in wine, and creative flair within organic, vegan and preservative-free winemaking. Sunshine & Spur is a new range of preservative-free and vegan-friendly varietal wines, with a focus on sustainable winemaking from regions across NSW. Named for the dappled sunshine falling on a vine spur, these are fresh and bright, drink-now styles of wine, perfect for any occasion!

Pairing guide
Made from 100% Shiraz, this easy-going pale pink rosé provides the perfect balance of classic finesse and audacious flavour. It’s the kind of bottle you want to whip out on an al fresco lunch, and will pair so well with barbecued fish dishes, light southeast Asian curries, spiced pastries, and platters of charcuterie. Delicious with Pad Thai, fantastic with a Margherita pizza, and unbeatable with a homemade quiche Lorraine, it’s a proper crowd pleaser with timeless appeal.

New South Wales, Australia

The state is home to 13 wine regions with the key regions being Hunter Valley, Orange, Mudgee and the Riverina. Where NSW is used on the label it refers to wines coming from across the state but not from any region exceeding 85% of make up of the wine.
