A bottle of Sunshine & Spur Pinot Noir is just like taking a walk through a cherry orchard in early summer. There is the scent of cherry blossoms in the air and the promise of summer berries is right around the corner. This wine is bursting with all these lovely summer berries and just like you can’t stop with one cherry, good luck stopping at one glass. No added preservatives, sunshine in a bottle!

We love being just slightly ahead of the curve here at Good Pair Days, so when the opportunity came to collaborate with Aaron Mercer on a range of preservative-free wines, we jumped at the chance! Aaron is one of NSW’s most versatile and awarded winemakers, and he’s also a genuinely great guy! With his own label Mercer Wines based in the Hunter Valley, and as part of the trio of Maker, Master and Merchant wine gurus, Aaron boasts extensive experience working not just around the wine regions of Australia, but also in France, Germany, Canada and California. Importantly, Aaron is best known for his positive impact on sustainability in wine, and creative flair within organic, vegan and preservative-free winemaking. Sunshine & Spur is a new range of preservative-free and vegan-friendly varietal wines, with a focus on sustainable winemaking from regions across NSW. Named for the dappled sunshine falling on a vine spur, these are fresh and bright, drink-now styles of wine, perfect for any occasion!

When it comes to food pairing, a good bottle of Pinot Noir is always a crowd pleaser that provides no shortage of options. This release from Sunshine & Spur is no exception; we loved it with a rich tomato-based veggie casserole, but it’s every bit as good with juicy duck breast with lentils, a spicy goulash, whole roast poultry, caramelised root vegetables, homemade burgers and meatballs and much more besides. Roast poultry, lamb, beef and pork will all work brilliantly, and it’s excellent with vegetarian favourites like stuffed mushrooms and lentil stew, too.
