If you ask your favourite voice assistant (Siri, Alexa, Google, you name it) what an Eden Valley Riesling should be like, it would point to this Stage Door wine. It's floral with jasmine and musky fragrance before a firm, lemon and lime palate that is driven by crisp acidity and endless freshness.
David & Mardi Hall will be the first to admit that it's a bit clichéd that they started a vineyard. That's because Dr David is a renowned spinal surgeon, and it seems every surgeon wants to own a vineyard. But the Halls have taken Eden Hall from a passion project into an incredibly impressive operation, all centred around their sustainably farmed 33-hectare vineyard near Springton in the Eden Valley. Actually, just sustainable is underplaying it, because the Hall's picturesque plot is regeneratively managed, with a cover crop of 20 species of plants grown in the vineyard, plus a specially planted insectary and a comprehensive onsite compost program that takes the 'compost heap' to another dimension. Given that it's the Eden Valley, Riesling is king, plus Shiraz, Cabernet Sauvignon and even some Grüner Veltliner too.
