Details
Tasmania is leading the charge when it comes to producing exceptional sparkling wines, and the traditional method ‘Salute’ from Spring Vale is one of them. Made from Chardonnay (69%), Pinot Noir (24%) and Pinot Meunier (7%), it displays complex aromas of pear, citrus and strawberry fruits alongside toast notes of brioche and pastry. Quite a powerful, creamy style that leads to a long and silky finish. A superb aperitif-style sparkling.
It's not "new" news to hear that Tassie is making amazing wines. What may be news is that Tasmania was the first state to plant vines in Australia! The estate's history dates back to the early days where William Lyne established the original vineyard in 1826. William’s descendants Rodney and Lyn Lyne took over the land and created "Spring Vale Winery" in 1986. Talk about a family with roots! Now, Rodney and Lyn lead the charge of wine production, and their son, Tim, champions viticulture. The winery is located on the driest part of the island, the Freycinet Coast. Here the low rainfall, warm days and cool nights create an ideal climate for slow ripening and excellent grape flavour. The family's production is primarily focused on world-class Pinot Noir and Chardonnay, but Gewürztraminer, Pinot Gris and a splash of Pinot Meunier certainly elevate the range with bottles to buzz about. Not to mention, they also make a couple small batch gins!

Pairing guide
A stunning Tassie sparkler made from the trinity of Champagne varieties, this gorgeous wine is as food-friendly as it’s possible to be. It’s going to be especially good with fried foods - vegetable fritters, crispy prawns, chicken tenders and fish ‘n’ chips - or with elegant finger foods ranging from caviar blinis to charcuterie, aged cheeses, or stuffed dates and figs. Oysters and other fresh seafood, ceviche dishes, sushi and sashimi or buttery pasta creations will also hit the spot in style.
