Prototype is a special sake, one that took over four years for the brewery to perfect. The challenge lay in layering the sweet notes you find alongside the round and smooth mouthfeel. It is lifted, aromatic and floral, with notes of green apple blossom, pear and fresh leaves. The palate is viscous and round, with the sweetness of tropical fruit flavours balanced by plenty of acidity. Pure, juicy and delicious!
Senjo is a unique brewery, located in the Nagano prefecture, due north of Tokyo - a region best known to most Australians for cool weather and the 1998 Winter Olympics! Nagano Prefecture has the highest average altitude in Japan, reaching over 1000m - the water is pure (snow melt from the mountains) and the nights are cold and the winter is cold, meaning it provides an ideal environment for high quality agriculture. Senjo was founded in 1866 and named after Senjo-ga-take, a 3000 metre peak in the Japan Alps, whose snow melt feeds the well water that forms the basis of their sake. Currently run by the sixth generation of the Kurogouchi family, Senjo Brewery combines art with science and traditional skills with modern technology to add new layers to Nagano’s rich history of sake brewing.

Stunningly floral and with an incredibly balanced and rounded character, this fascinating and rather unusual sake is guaranteed to capture the attention and become a brand new favourite. We loved this sake served alongside cooked fish (rather than the perhaps more expected raw counterpart), and it’s great with regional Japanese specialties like kabayaki fish fillets, sukiyaki beef hotpot dishes, chicken yakitori and other grilled white meat classics. Tofu ramen, sweet and sour noodle dishes and sticky ribs would also be worth trying with this beautiful bottle!
