Details
This Chenin Blanc is a perfect example – a variety that doesn’t see much attention in Australia, but has grown in the Barossa for decades. A modern take on an old classic. Bright and aromatic in the glass – full of white grapefruit, yellow apple and a touch of honey, flowing on to a palate full of peach and subtle herbs, and then whipped into shape by salty acidity. Tangy, zippy, makes you feel alive!

Jason Schwarz was doomed to be a winemaker from his childhood. Ensconced in the vineyards of South Australia, in particular Bethany in the Barossa Valley, his parents had provided the suitable environment from the very beginning. After finishing his winemaking degree, he set off to see the world and completed vintages in France, the USA and Argentina, before returning home and starting his own label in 2001. Starting off with only a two barrels of Barossa Shiraz in the first year, he followed this with a similar amount of Grenache the next. The Grenache is still made every year and is a fixture in his offerings. With great fruit sources from the beginning and a heap of guidance from some key Barossa winemaking and grape-growing icons, the wines of Schwarz deliberately try to the show off the quality of the fruit with a minimal intervention.

Pairing guide
Festive menus are all about indulgent flavours, and this Chenin Blanc from Schwarz definitely strikes that particular chord in style. This wine loves being paired with opulent salads of seafood or chicken and fresh greens, and is especially well-suited to dishes which bring together sweet-and-savoury elements of white meat, juicy fruit, and sticky glazes. It’s great for Cantonese takeaway favourites, will pair nicely with a honey-glazed ham, and is a top choice for smoked salmon starters, too.
