Details
This is a masterful expression of Japan's most prized sake rice, Yamada Nishiki. This sake offers a beautifully balanced flavour profile, where subtle notes of steamed rice, white peach, and a hint of chestnut come together harmoniously. On the palate, it delivers a velvety texture with a gentle, rounded richness that is both satisfying and elegant.

Nestled in the heart of Hyogo Prefecture, Sawanotsuru is one of Japan’s most storied sake breweries, with a rich history dating back to 1717. Over three centuries, the brewery has perfected the art of sake-making, blending tradition with innovation to produce some of the finest sakes in the region. As a proud guardian of the Nada tradition - a style renowned for its bold and robust flavours - Sawanotsuru continues to uphold the legacy of its forebears while embracing modern techniques to enhance the quality and consistency of its brews. At the helm of Sawanotsuru’s production is Master Brewer Keizo Sudo, a revered figure in the world of sake who has dedicated his life to the craft. Under his meticulous guidance, the brewery employs the traditional kimoto method, a labor-intensive process that enhances the depth and complexity of their sakes. Among their distinguished lineup, the Sawanotsuru Junmai Ginjo and Yamada Nishiki sakes stand out, celebrated for their delicate balance of umami and elegant aromas. With each bottle, Sawanotsuru offers a taste of history, craftsmanship, and the unique terroir of Hyogo.

Pairing guide
We’re always excited to uncover a new Sake to share with you all, and this beautifully-crafted Junmai Sake is an absolute gem we just know you’ll adore. It’s an impressively versatile release when it comes to food pairing, too - we loved it with some slow-cooked pork belly, but any fattier cut of meat with a zesty marinade will hit the spot perfectly. Sushi and sashimi are obvious matching partners that never fail to satisfy the senses, and it’s also excellent with seared scallops, ceviche dishes, raw oysters with a bright citrus dressing, and with game birds like roast guinea fowl or duck with plum sauce.
