The fruit in this wine leaps out of the glass with melon and citrus abounding. Its a delightfully 'unoaked' version of Chardonnay, and all that fruit just highlights how versatile the grape variety can be. Refreshingly crispy, zippy flavours with obvious fruit characters that get a little peachy, with honeydew melon, and despite no oak, you'll find that natural creaminess plus hazelnuts, lime pith & zest. It's one of those Chardonnays that's not afraid of fruit and easy to understand. Not a lot of preservatives or winemaker influence here, its really a very 'cool kids' kind of wine. Bright and easy. Best served nice and cool.
You might have heard of Bill Downie, who shot to 'wine-cool' fame with his ethereal take on Pinot Noir, expressing regions throughout Victoria. Before his own Pinots became so highly sought after, Bill cut his teeth at De Bortoli in the Yarra, where despite being reasonably 'unqualified', he was promoted purely on his philosophical take and love for Pinot Noir, obsessing himself tasting the great wines of Burgundy. Pinot Noir was Bill's calling that he simply couldn't shake, and so, 'William Downie' Pinot Noirs were born (and continue to be made every year) So, there's one grape variety done, and with so much talent and wine know-how, Bill started 'Save Our Souls', and that's where you'll find Jason Searle. The two friends met in the vineyard of Bass Phillip in the mid-noughties, bonding over a common love for a laugh and a great wine. They don't make 'picture perfect' squeaky clean wines - it's all about the grapes, not about awards or accolades. Plus nothing is added to their wine up until bottling, so sure, it's vegan, it's single vineyard, it's whatever you want to call it, but it's all about drinkability. Considered 'natural' by many, because they aren't heavy handed on such 'adds' if ever, at all... but they won't tell you that. Playing with the weird and wonderful, such as extended skin-contact whites, an 'oxi' Jura-esque salty Chardonnay to their delicious, yet usually impossible to quaff as a variety, Sagrantino. These guys aren't afraid to splash out delicious, easy and great value wines.

We absolutely love the racy freshness of this gorgeous Chardonnay from Save Our Souls, which offers no shortage of character in the glass and mountains of food pairing potential. We adored pairing this wine with meatier fish dishes - halibut, cod, and barramundi are always a great option with this wine - and it’s also going to work wonders with stuffed chicken breast, lobster and crab dishes, and with savoury pastries and pies filled with creamy vegetables or white meats. It’s also a delicious wine to pair with a less spicy Indian curry, and will work well with spicy Malaysian specialties, too.
