Details
Made from mainly Chardonnay, with Vermentino and Sauvignon Blanc thrown in, this is a textural sparkling that is all about the bubbles. We're now up to the third edition of this ever-popular sparkling, and it's another winner - it swirls around with stone fruit, pears, and even rock melon. It's a joyful, bubbly of fruit and life that is chock full of gorgeous flavour.

You might have heard of Bill Downie, who shot to 'wine-cool' fame with his ethereal take on Pinot Noir, expressing regions throughout Victoria. Before his own Pinots became so highly sought after, he was promoted purely on his philosophical take and love for Pinot, obsessing over tasting the great wines of Burgundy. Bill's calling has always been wine, which he simply couldn't shake, and so 'Save Our Souls' is just one of many projects he works on. Along with mate Jason Searle and the aforementioned Bill, two friends from the vineyard of Bass Phillip bonded over a shared love for a laugh and a great wine. They don't make 'picture perfect' squeaky clean wines - it's all about the grapes, not about awards or accolades. Plus, nothing is added to their wine until bottling, so sure, it's vegan, it's single vineyard, it's whatever you want to call it, but it's all about drinkability. Considered 'natural' by many, because they aren't heavy-handed on such 'adds' if ever, at all... but they won't tell you that. These guys aren't afraid to splash out on delicious, easy, and great-value wines.

Pairing guide
You’ve got to love the extreme freshness and revitalising qualities of this delicious sparkling wine from Bubbles & Co. Made from a blend of some of our all-time favourite varietals, it’s an absolutely stunning choice for pairing with ceviche, simple grilled fish or chicken breast dishes, leafy green salads, and raw or lightly-cooked shellfish. We also love this wine with battered and breaded chicken, fish, or vegan substitutes, and it’s an absolute joy to drink alongside a big platter of sushi or a Hawaiian poke bowl.

Wine region
Victoria, Australia
Victoria is the second smallest state but is home to more regions and individual wineries than any other state in Australia. This is thanks to the diversity of regional and micro climates, that allow for the every imaginable wine style under the sun, from stylish and refined Chardonnay (Beechworth) to brooding, finessed Shiraz (Heathcote); intense and complex Pinot Noir (Macedon Ranges) to unique and decadent fortified (Rutherglen), you’ll find a wine to suit any occasion from the diverse regions of Victoria.
