Details
Fiano has garnered a bit of a following in Australia recently, and this bottle shows why. Such a knock-out wine! Lots of power and complexity here, loaded with ripe yellow citrus, pear, guava and a touch of melon. It's not all fruit though, as the palate is incisive, with more citrus (think tangerine and grapefruit), hazelnut and some green herbs. Powerful acidity binds it all together.
Santa & D’Sas was established in 2013 but the team behind it had known each other for years prior. Andrew Santarossa (Santa) and Matthew Di Sciascio (D’Sas) met during their formative years of university. Sue Di Sciascio keeps the guys in line and is responsible for the design of the labels, amongst other things, of the different tiers of wines that are created by the gents. With a many years shared studying, lots of long lunches and wine “tastings”, the inevitable happened and the decision to jump into wine production was made. With the task of sourcing fruit at hand they have found vineyards in top tier territories. Each location brings different qualities but their idea is to focus on cool climate areas. Currently they are sourcing varieties such as Chardonnay, Pinot Gris, Sangiovese and Pinot Noir. Fruit sources are all in Victoria and at this stage include King Valley, Yarra Valley, Henty, Geelong and Heathcote but they always are on the look out for more amazing fruit.

Pairing guide
This bright and luxuriant Fiano wine from Santa & D’Sas is sure to delight even the fussiest of palates! Packed with flavour and character, it’s the kind of white wine that’s just made for food pairing, and it’s going to especially hit the high notes when served with salmon or tuna (especially when glazed with soy, ginger, and other southeast Asian flavours), or roast chicken cooked with citrus zest and Mediterranean herbs. Beautifully versatile and food-friendly, Fiano also pairs very nicely with cheese sauces and rich, buttery dishes, allowing you plenty of scope for experimentation with Italian takeaway favourites (we’re looking at you, pizza blanca), pasta dishes, and risottos, too.
