Bright, light and effortless, this beautiful light red shows just how delicious a lighter shade of red wine can be. The Pyrenees is famous for dark fruited wines, and this has dark cherry and dark raspberry fruit, with all sorts of complex olive and dark chocolate complexity. Lithe, but not unsubstantial, there's still some of the depths that Pyrenees Syrah can show, but with lightness and brightness too.
Jeremy Shiell is a recovering sommelier, cellar hand, bon vivant and general good time guy. He lives in Daylesford, in central Victoria, and has been assisting some of the local winemakers for a few years now, before deciding to strike out on his own in 2022. This is only his second release ever, and we are excited for it! Having formerly curated wine lists at esteemed restaurants like the Royal Mail Hotel and currently pouring and snoring at Winespeake in Daylesford, Jeremy has a deep appreciation of the world of wine, and has clear ideas about what makes wine delicious. Cool climates, delicate fruit flavours and tangy acidity. This wine is all of that. Made at Cobaw Ridge, home to great Pinot, Chardonnay and Syrah; Jeremy worked with Joshua Cooper (son of the founders of Cobaw Ridge) to craft a small suite of excellent, precise and digestible wines. There aren't many classic steak tartare wines out there, but this unique light red has the pair sorted! There's enough dark fruit to match the meaty richness but with the crunch and freshness that's required for tartare. Beyond the beef, this Saeke will pair wonderfully with other classic Parisian fare - soups, duck legs, casserole, and even quiche. Venison will go handsomely, too, although for the true off-piste experience, you'd be surprised at how well this spicy red goes with rich Indian curry, too (just choose a mild dish to avoid the spice clash).
