Details
Rymill's wine range all has horse themes, and this red is intended to be the one you drink first - the easiest drink in the range. Of course, it's still one seriously grown-up red wine, with a supple mix of redcurrant fruit, a little dark chocolate, and then the trademark earthy tannins that the Coonawarra region's Cabernet is famous for.
Origin: It’s believed that the first wines made were in the Médoc region, in the west of France. Mainly Grown In: France, USA, Australia, Italy, Chile, South Africa, Argentina, Spain, NZ… all over, really! Key Facts: Cabernet Sauvignon is truly a globetrotter. Having a home in Bordeaux certainly helped its rapid expansion, as the Bordelaise (those coming from Bordeaux) are excellent marketers of their own product! Now found in almost all wine-producing countries of the world, Cab Sav is traditionally full-bodied, loaded with plenty of dark fruit (think blueberry and blackberry) and backed up by a zing of herbal/grassy kind of flavours. It’s also known for its strong backbone of tannin – that furry, drying sensation you sometimes get with red wines. Cabernet has plenty of it, but is still a smooth talker regardless. Fun Fact: Cabernet Sauvignon is the most planted wine grape in the world. Seriously. The whole world. Hat's off to the King! (Or the Queen)

Pairing guide
We make no secret of our undying love for Cabernet Sauvignon wines - when it comes to big, bold red wines perfect for matching with seriously hearty and punchy dishes, there’s really no competition. This release from Rymill is ideal for steak night, brilliant for rack of lamb with garlic and rosemary, and sensational with dishes that feature wild mushrooms and strong blue cheese. Slow-cooked meat and vegetable stews, deeply flavourful puy lentil braises, roast eggplant with miso or a strong cheddar, and anything with plenty of truffle in the mix is going to work an absolute treat here.

Wine region

Coonawarra, Australia
Coonawarra is in the southeastern corner of South Australia, located in the Limestone Coast of South Australia, about 300 km southeast of Adelaide. The region experiences a maritime influence due to the upwelling of cold ocean currents. The main varieties grown in the region are Cabernet Sauvignon, Shiraz, Merlot, and Chardonnay. Here you can find the legendary terra rossa soil, with its thin iron-oxide-based topsoil over limestone, giving it that unmistakable reddish hue. This soil type is believed to be a major contributing factor to the robust character of the wines.
The Coonawarra wine region stretches about 15 km, with more than 50 wineries. Penfolds, Wynns, Balnaves, Rymil and Katnook Estate are among the most notable and historic in the region. Each of them produces highly sought Cabernet Sauvignon that is medium to full-bodied, with brood notes of cassis, blackberry, plum and dark cherry flavours. Structured with firm but plush tannins, the very best of them cellar gracefully for decades.
