Baila Con Toro is the label dedicated to Alex Russell & Lara Suitor's daughter Audrey. Audrey likes to dance with brother Angus (who is nicknamed The Bull), hence this label is named after dancing with her brother. Love it! This is a lovely soft sparkling too, made from the Pipers River area in northern Tasmania. There's just a little pink tinge on this wine, thanks to the Pinot Noir grapes, and it all adds a little pink fruit to what is otherwise a crisp and delicate refreshing style of Australian premium fizz.

Alex Russell is an entrepreneurial winemaker who began his winemaking journey by crafting wines from Mildura and the Riverland, using a range of so-called 'alternative' grape varieties (mostly Mediterranean influenced) to create modern and approachable wines. Since then he has expanded south, to Tasmania, where he creates more classically styled wines from Pinot Noir, Riesling and Chardonnay. From Merlot to Montepulciano, the breadth is quite astounding! So where does the Suitor part come in? That's Alex's wife, Lara Suitor, who grew up in northern Tasmania and has spearheaded the brand's push to make more Tasmanian wines, including the range of Balla sparkling wines and Son of a Bull cool climate whites and reds (and they're delicious).

This elegant fizzy wine from the Tasmanian arm of the Russell & Suitor business definitely knows how to impress when it comes to mealtimes. Like most sparkling wines, this one is highly versatile and incredibly food-friendly, and will pair with pretty much anything you throw at it. It’s especially good with breaded and fried fish and white meats; a classic fish ‘n’ chips or escalope is going to go down perfectly, and it’s also going to be fantastic with fritto misto, tempura vegetables, and crispy squid, too. Simply-cooked seafood, smoked fish, and caviar preparations are never a bad idea, and you’ll also get great results with Japanese and spicy Southeast Asian cuisine, too.
