Like a plump juicy date dipped in warm, runny chocolate. This wine is classically 'PX' - sweet, slick and viscous, with spice and a persistent line of flavour. There is a splash of 'Oloroso' sherry in here, which builds in its complexity - Anzac biscuits, toasted hazelnuts and a perfectly balanced sweetness. Stupendously good.
One of the few Sherry producers in Jerez to remain in the hands of local, family owners - the Sanchez de la Torres have kept ownership since establishment in the late 18th century. Located in the south-western corner of Spain, the Romate 'bodegas' are now over two hundred years old. Current winemaker Juan Sanchez de la Torre, is a master of his heritage craft, producing wonderful various styles of 'sherry' as well as incredible brandy and vinegars. Progressive in his approach with respect to modernisation and technology, this open-mindedness is to seek a deep understanding of the vineyards and winemaking, to preserve the treasured character of these incredibly complex, long lasting wines.
