From the sustainably managed Chalmers vineyard, this is a serious, spicy rosé of real power. It smells a touch smokey to start with - needs some air to show its full potential. When it does though, it's a real show - dried apricot, pepper, cloves, dried plum and strawberry. There's plenty of oak in there, and it's definitely a rosé for the dinner table rather than the park, but it's lovely in an unusual way.
It's not every day we get to team up with one of Victoria's most thoughtful and considered winemakers to make something undeniably unique and elegant — but lucky for your and our taste buds, we did! The Red Embers Rosé is a collaboration project between Good Pair Days and renowned winemaker and bon vivant Adam Foster, who lives and grows grapes in the central Victorian region of Heathcote. In many ways, Foster - who has labels Syrahmi and Garden of Earthly Delights - personifies pretty much everything that is great about the Australian wine scene right now. This is a guy who spent his late teens and early twenties sweating it out in a range of top kitchens, in both Victoria and London, all the while developing his palate and learning what he loved... and what he didn’t. He quickly discovered that the perfect balance when it came to wines was the combination of great flavours, simple, uncomplicated winemaking, and an approach which put enjoyability before pretentiousness, every single time. With no ancestral connection to wine, and no inherited winery to fall back on, Adam knew it was up to him - and him alone - to carve his niche in the wine industry, and he would have to depend entirely on his instincts and senses to do exactly that. His first release was 2004, and now, nearly 20 years later, Syrahmi is going strong, and Adam is experimenting with a wider range of grapes and styles. That do-it-yourself vibe and unapologetic approach, however, is just the same as it’s always been… and we’ll raise a glass to that all day long.

Savoury, spicy, and utterly delicious, our own label rosé is one we’re incredibly proud of! Made from punchy Mourvedre grapes, this pink wine is going to be delicious with rare lamb or duck dishes, meatier fish like salmon, trout, or tuna, and anything featuring salty charcuterie or ham hock. Grilled fish, shellfish, and simple chicken dishes are also going to hit the high notes, as are spicy egg salads, stuffed vegetables, olives, and anchovies.

The Heathcote wine region is located in central Victoria and until the 1980’s it was broadly known as part of Bendigo. The region itself is famous for the ancient cambrian soils which date back 500-600 million years which characteristically have a rusty, iron colour and have good moisture retention which is ideal for this warm region. Heathcote is well suited to Shiraz and Grenache as well as newly introduced varieties like Fiano and Nero D’Avola.
