Details
Importantly, while we put this wine notionally in with the other Spanish sparkling Cava wines, it's actually from the Corpinnat designation of next level Cava producers. This delicious sparkling wine deserves to be put on a pedestal too - it's a wonderfully finessed fizz with all sorts of almond and lemon energy before a crisp and extremely refreshing bone dry finish of near-perfect expression.

Is this the most ambitious sparkling wine project in Spain? Recaredo has been a pioneering producer since the start, with this Penedès winery among the first in the region to be certified biodynamic (back in 2010) and was among a group of Cava producers who, in 2017, technically left the Cava region to form their own group called Corpinnat that has strict rules about production and ageing that would make even the French blush. It all starts in the vineyard, where the grapes are farmed organically and biodynamically before being handpicked, with every wine matured for at least 30 months, and a second fermentation that uses only wild yeasts, with all bottle top-ups done with wine rather than sugar. Finally, the wines are disgorged by hand, too! Uncompromising standards do deliver great results, however, and it's impossible to argue with the quality in the bottle - these are Champagne-esque wines of sublime expression and detail.

Pairing guide
Rather than reaching for some of the more flavoursome pairings we would choose for other Cava, this super fresh and vital Recaredo sparkling is better paired with Champagne options. Fresh fish like salmon or kingfish, oysters, scallops, squid, octopus or clams are going to work wonderfully, but any delicate style of seafood dish is going to be a winner. You know what else this sparkling goes well with? Cheese on toast. The simple joy of cheese, butter, and bread is like a guilty indulgence, and it works like a charm with what is a very charismatic Spanish sparkling wine!
