Slatnik is a blend of Chardonnay and Sauvignon Vert - aka the grape once known as Tocai Friuliano (until the Hungarian wine industry helped ban the name, but that's another story). Fermented over a week on skins (which is full-bodied red territory), this fascinating orange wine has so much going on, from the floral marmalade and orange blossom hints, through to the taut, tangerine-tipped and grippy palate, right through the finish. What a wine!

Maybe it's something in the water, or perhaps it's just life in a border region. Whatever it is, the green, hilly edges of Friuli, where it touches the Italy/Slovenia border, remains a hotbed of wine fascination, with an array of winemakers pushing every possible boundary with minimal intervention wines. Much of the modern revival of this region comes down to the work of Stanko Radikon, who in 1995 made the pioneering step of fermenting some of his white grapes on skins to create a Friulian orange wine. Stanko went on to become a natural wine icon, embracing not just skin contact but also minimal additions across a range of whites and reds that turned the Italian wine world upside down. While Stanko passed in 2016, Sasa Radikon has now taken up the mantle to challenge norms and provide sensational natural wines.

With such an iconic orange wine in your glass, the choices of what to pair with it are just as interesting. It’s going to be great with anything featuring nuts and cheese, wonderful with grilled chicken and mushrooms, and especially good with North African flavours like harissa, ras-el-hanout and preserved lemons with chicken. We really love this style with cured meats, and don't tell anyone, but it's a seriously fantastic wine to have with a dead-simple homemade pizza, too.
