Cool, clean and fresh, that's the message with this Pet Nat, which has just a slight haze. It's a blend of Arneis, Pinot Grigio and Gewürztraminer, and you can see the tropical mix of pear, pineapple and mango, backed up by some hints of almond, honey and chalk. Very fresh and clean, with just a little of the creamy Pet Nat juiciness for balance.

Making great Pet Nat - aka Pétillant Naturel is a project in itself, so why not make a label out of your quest? For the uninitiated, pet nat is the original method for crafting sparkling wine and involves simply bottling a wine while it's still fermenting. That's it. No tricks, fancy disgorgement or autoclaves (expensive pressurised tanks used to make Prosecco), just juice with bubbles. Indeed, the bubbles come from the carbon dioxide produced during fermentation, so they're all natural. And the resulting wine is a fizzy, fruity delight, made without anything added! Where it gets tricky is nailing the Pet Nat brief, and this is where Warren Proft (who is also a winemaker at Christmont) and the Pet Nat project step up. Using cool fruit from the height of the King Valley in NE Vic, the ethos here is absolute purity and hands-off winemaking, with even the bottles done by hand.

This bubbly beauty is about as food friendly as can possibly be; we absolutely love it with samosa, pakoras, spring rolls, and any other deep-fried Asian savoury snack that’s a little bit naughty but unashamedly nice. Southern fried chicken, and chicken noodle dishes will pair perfectly and that fruitiness will even work with a simple fruit platter (just serve well chilled).
