It's superstar rosé with a cause. Profits from this wine support APPACDM, a Portuguese organisation dedicated to training, education, and rehabilitation for people with disabilities. It's a special wine, too, as the first-ever dry rosé under this label, made from a special plot of Baga. It's a beautiful pale rosé too - bright yet finely textured, with notes of pink fruit and red apple, and next-level complexity.
Like a Portuguese dream team, Filipa Pato and William Wouters are a husband-and-wife wine-making duo, crafting a slew of unique wines. They've come from two rather interesting backgrounds, too - Filipa's father, Luis Pato, who helped put the region of Bairrada on the map. Although Filipa was born into wine, she actually studied chemical engineering at uni and came to wine later (via NZ and Bordeaux). William Wouters didn't come from a famous winemaking family, but was instead born into restaurants and was famously the chef for the Belgian national soccer team! Together, as Pato Wouters (or Pato & Wouters), this pair make interesting and proudly Portuguese reds. whites and sparkling with a motto of 'wines without makeup'. Crucially, they only use indigenous grapes like Baga, Bical, Arinto, Cercial and Maria Gomes, led by a thoughtful, minimal intervention approach and guided by their well-travelled palates.

Complex and savoury rosé like this can be quite a ride, with quite the flavour contrasts. This beautiful wine fits that perfectly, with the soft, creamy pink fruit and red apple nicely offset by taut acidity. Risotto and rice-based dishes are a go-to with this, with the soft rice flavours blending in nicely. An Arroz De Marisco would be a natural choice, or any seafood risotto for that matter, as would leek, chicken or cheese as further risotto ingredients. If anything, you just don't want to serve it too cold - chilled is best.
