This pet nat (cloudy sparkling wine) is made from a blend of the grapes Zibbibo and Greco, two Italians that offer up a riot of stone fruit flavours and a spark of zesty acidity. The main flavours are in the ballpark of melon, paw paw and mango, all backed up by a creamy texture. The acid is nicely in balance, and the wine finishes with a soft, almost candied edge. Easy drinking!

Origin: The French and the Italians argue over who did it first. Mainly Grown In: Those two countries still make plenty, with Australia and the USA catching up Key Facts: Pétillant Naturel wines (or Pet Nats) are sparkling wines made by bottling the wine whilst it is still fermenting. When the carbon dioxide (a by-product of fermentation) is released, it has nowhere to escape to and is re-absorbed into the wine! Voila - bubbles. One of the traits of Pet Nat wines is the complexity that comes from the long time the juice spends mixing with the lees (aka yeast cells). The result is a bone dry, zesty sparkling wine that looks slightly cloudy in the glass but is delicately refined on the palate. Fun Fact: Its real name is Pétillant Naturel but being Aussie we shorten everything - thus pet nat.

These delicious Pet Nat from Paper Mache really delivers when it comes to that gorgeous fruity flavour, and it’s about as food-friendly as it’s possible to get. Pairing Pet Nat with oysters has become somewhat de rigueur among foodies in recent years, and we’d argue that pretty much any fresh seafood will do the job nicely. Camembert, with its rich and funky flavour, will also work well, and this wine will love being matched up with dishes consisting of nuts and whole grains, too. Herby risottos, pickles, and deep-fried or breaded fish will also work a treat!
