This is a very impressive sake, aged for 2 years in bottle prior to release. It is made using only one variety of rice, the very premium Yamada Nishiki strain. It results in a light, aromatic style that is very complex. It shows off notes of white melon, aniseed and sage, with a crisp yet rounded palate that is very versatile at the dining table. Pure, dry and fresh.
Nagai Shuzo is a brewery with more than 135 years of history. Located in the Gunma Prefecture, about 2 hours drive north of Tokyo, this brewery has slowly been modernising and perfecting their approach over the past few decades, building on the historical precedents of their founders. Today the operation is run by husband and wife team Matsumi and Noriyoshi Nagai - the 6th generation of the Nagai family to run the brewery! Mizubasho is brewed from water that began as snow and rainfall, then filtered slowly through the ground before being pumped up in Kawaba, a small village. In a move that shows the absolute emphasis that breweries place on the water quality, Nagai Shuzo purchased the 60ha surrounding their water source to ensure cleanliness! We've chosen to highlight the Mizubasho range of sake - a selection that sees a relatively modern approach. From the heady, mixed fruit aroma to the perfect amounts of umami and dryness, this sake is sure to satisfy.

It was love at first sip when it came to this beautiful sake, which offers a stunning delicate character that’s ideal for pairing with light dishes and elegant finger foods. We especially enjoyed this sake with light vegetable tempura dishes, although it would work very well with tempura prawns or white fish, too. Crispy tofu, lighter Japanese salads, vegetarian sushi and oily fish like sardines would also provide excellent pairings to explore.
