Details
Famously, Chianti is the medium-bodied red that really put Sangiovese on the map, with its savoury red berry goodness a thing of legend. Aaron Mercer has channelled that Italian vibe with this Sangiovese from the cool heights of Orange in NSW, with a style that is bright, lively and full of berry flavour with both a softness and spicy grip that makes it a right champion on the dinner table.
Forget traditional varieties - think new, sustainable, and vegan-friendly varietal wines from all over NSW. The idea of Mercer Wines had been fermenting for over twenty years, starting when Aaron had begun selling wine and scrubbing tanks in the Hunter Valley, and learning from local legends, he realised the joy of making wine and has continued his education all over the world. Aaron is one of NSW’s most awarded and versatile winemakers. With extensive experience working in France, Germany, Canada and California, he is best known for his positive impact - and flair for accuracy and creativity - with organic and preservative-free winemaking in Australia. Aaron is now settled back in the Hunter Valley with his wife, Alison and their family. They both knew that starting a brand and business would create flexibility in their lives to enjoy the things they love most; family, travel and wine. Today Mercer Wines has come full circle in providing unique, sustainable wines that are fun, fruit-driven and delicious for any occasion!

Pairing guide
The clever mix of bright berry fruit and then dry and life-affirming tannins gives this wine a near-perfect balance and makes it irresistible. Sangiovese wines have a natural affinity for cooked and stewed tomatoes, rich ragu sauces, and hearty Italian fare… and to deviate from this traditional set of pairings would be a fool’s game. Robust meat dishes, such as ossobuco or any dish with slow-cooked meat, are going to be welcome, plus you really can't go wrong with couscous, beans and risotto, especially dishes with a more earthy and savoury edge.
