Airen is a grape variety without much of a following, which is strange given how much of it there is! It is Spain's most planted white grape variety, but doesn't see much love outside those borders. This is a classic representation of it - load of juicy acidity, subtle white pear and melon fruit notes and a crunchy, chalky finish. Always built around the acidity and the freshness rather than weight, this is just the things for fresh seafood and beach picnics.

The Spanish wine scene is in a fascinating place right now. Alongside the tried-and-tested classics we all know and love, there is an increasing interest in getting right back to the rustic heart of Spanish viticulture - and that means returning to underappreciated indigenous grape varietals, unearthing traditional techniques, and stripping back production methods to allow the true flavour of the fruit to shine. This trio of modern-yet-ancient approaches is typified by the team at Mas Que Vinos, a Spanish bodega based in the beautiful medieval town of Toledo; a team on a mission to champion some of Spain’s forgotten grapes and bring wine back to its earthy, honest, and authentic roots. Bodegas Mas Que Vinos was formed when three friends met in - where else? - Rioja, gaining winemaking experience at the hands of some of the country’s master vintners. Each had a real passion for the kinds of wines they’d only ever seem to find in small village drinking houses, and decided to pool their knowledge and skills in order to bring refined interpretations of such wines to the wider world. In 2007, all the plans were laid and the systems were set in motion to make that passion a reality, and thanks to vintner Gonzalo Rodriguez’s family history of winemaking, they even had access to some ancient amphorae, which add a real sense of heritage, time, and place to every bottle. Mas Que Vinos is very much a sustainable operation, too, and the principles of natural viticulture and minimal chemical usage is at the beating heart of every stage of the vinification and bottling process. After all, this isn’t just about making approachable, delicious, and traditional wines with a modern flair, it’s about establishing new traditions and protecting their land for future generations to enjoy. This unusual and underrated Spanish white wine is a real hidden gem, and one which is sure to get your imagination whirring in the kitchen. Its freshness and balance makes it work wonders alongside simple fish dishes - think grilled sardines on toast, or dorada cooked in butter - and the elegant blend in this wine gives it a versatility which is great fun to experiment with. We think this wine would work particularly well with dishes which feature plenty of green leafy vegetables, especially ingredients like kale and spring greens, and it would also be delicious served with simple risottos or chicken and rice dishes, too.
