Such a beautiful coloured Pinot, it's dense and ripe aromatically. There is a nostalgic pencil shaving note over lashings of very 'Pinot - centric' fruit characters. Cherries of every shade, it's ripe on the palate too, but minerally and austere, likely the limestone character coming through. So Frenchy, so chic.

Chablis as a region is unique, and typified by its soils, a former sea bed of fossilised shells embedded in limestone clay, giving the distinct character of 'minerality'. Here in Chablis, the family owned Domaine Servin have a long and rich history, owning vineyards in Burgundy and it's surrounds, tending to vineyards dating all the way back to 1654. Predominately a white wine growing estate these days, they do make tiny amounts of Pinot Noir, and today they own some of the best parcels in Chablis, with some Chardonnay vines older than you are. An organic estate by principle, they are as sustainable as can be, regarding the health of their soil as the most important asset to their high quality wine production. The label stating 'Bourgogne Pinot Noir' is essentially 'Pinot Noir' from Burgundy. Made under the 'Marcel Servin' range from the domaine, these are the personal wines of winemaker Francois Servin, named after his father, Marcel. Only when the season is perfect, are these wines made, which in turn mean they're quite limited and exclusive in production. Francois says that making wine is an art, whereas so many people reduce it to a science. Using traditional 'old-world' techniques, this Pinot Noir is so classically Burgundian, it doesn't need to wear a striped shirt and a beret for you to instantly recognise it as French.
