This fizzy Pinot Noir from Adam and Brooke at Lambrook is just the ticket for a celebratory occasion, whether that be Friday or Christmas day. A soft, pillowy texture with zesty acidity and delicious flavours of wild raspberry, grapefruit and chalk. This has enough complexity to warrant another sniff, and enough deliciousness to warrant another bottle!

Lambrook is relatively young estate, founded in 2008 by husband and wife Adam & Brooke Lampitt. Both were working in the industry at the time and were keen to start their own business, doing everything by hand and with immense passion, from vineyards in the Adelaide Hills. Their first vintage was made with two small parcels of fruit (Shiraz and Sauvignon Blanc) and a half-crazy idea. 700 bottles and a pallet of wine in their spare bedroom later, they realised they might just be winemakers! Fast forward a few years and there's more grape varieties, more wines, more craziness and more fun. Lambrook is a now a fully fledged wine brand, uncompromising about what they make—if the fruit isn’t up to scratch, they won’t make the wine. It's rare to see this dedication to quality, but we certainly thank Adam & Brooke for theirs! From the vines up high in the hills, down to their warehouse in inner-city Adelaide, their infectious enthusiasm and love for what they do is palpable, and the wines are just brilliant - articulate and fruit-forward, with plenty of freshness. The team at Lambrook always pull out all the stops when it comes to their characterful sparkling wines, and this beautiful bottle is truly no exception. It’s a great choice for chicken or pork dishes in a creamy sauce, elegant pasta creations with a buttery reduction or green pesto, seafood like crab and lobster, and especially with barbecued prawns drizzled in a white wine sauce or tossed in plenty of lemon and herbs. Fried and breaded chicken, pork, turkey or fish will be excellent, and it’s also delicious with crispy tofu, vegetable fritters and even berry-based desserts!
