Details
This wine jumps out of the glass from the first pour with notes of apple, lemon and honeysuckle. It is fragrant and enticing, with the palate showing the same fruit notes along with some mouth-puckering acidity before the natural sweetness kicks back in to balance things out.

Origin: Spain. Mainly Grown In: The central-northern Spanish region of Rueda. Also, in small amounts in the USA. Key Facts: Verdejo is the pride and joy of Rueda, in northern Spain. Here it achieves its ultimate expression - nutty, rich and aromatic. It's a real chameleon of a grape, having some characteristics of Sauvignon Blanc (with both grapes' grassy and high in acidity), but also some richer, rounder tones. Look out for complex flavours of bay leaf, almond and lemon. Whilst the acidity can be bright and tangy, there's always plenty of depth to the wines, meaning they have a really lovely texture - soft and even creamy sometimes. A really lovely expression that deserves more attention! Fun Fact: Quite a versatile grape, Verdejo is also produced as a sparkling wine and a fortified, sherry-style wine.

Pairing guide
This is a fragrant, zesty white with a lovely balance of acidity and natural sweetness, making it a brilliant companion for fresh, flavourful food. Grilled prawns with a citrus-and-herb butter, a light fish fillet with lemon and capers, or a fresh crab and avocado salad are all excellent starting points that match the wine's bright, lively character. That beautiful honeysuckle and apple freshness also make it a natural with lighter fare like a zesty chicken and fennel salad, some crispy soft-shell crab, or a Vietnamese prawn and mango rice paper roll situation. For something more relaxed, a soft goat's cheese with some sliced apple, a drizzle of honey and a few good crackers is a beautifully simple pairing that lets all that fragrance and freshness shine through.
