Unique. That's the only way to describe this fortified wine. Made from Viognier grapes that are fermented and then fortified before ageing in a warm shed to ultra-concentrate the flavours. And concentration is not lacking here - it's seriously lush. Dried apricots, cooked peaches, vanilla ice cream, honeysuckle, the whole kaboodle. Oh and the bottle? It's beautiful too!

Inkwell is all about removing as much of the artificial as possible from the winemaking process. 'Modern, alternative and handmade' is the motto here. Dealing in low yields and small batches, Inkwell makes use of just one tractor, one de-stemmer, a single press, and small fermenters to gain absolute control over their output. Needless to say, that output has gained no shortage of fans, thanks to an incredible array of flavours and characteristics that continue to support McLaren Vale’s peerless reputation.

Fortified wine like this with such megastar flavour intensity really needs a whole lot of flavour in your pairing. Caramel, caramelised fruit, custard and honey are friends here, but really any dish that has the right amount of rich and ripe fruit energy is going to work. Trifle, jelly and sweet pastries are obviously a natural choice, as is scones with apricot jam, figs and fruit cake. You'll want to try this after a little spell in the fridge too, as a chill really helps take the edge off that very sweet luscious fruit flavour density.
