Founded in 1864 in Aichi Prefecture (central Japan, near Nagoya), Houraisen Sake is crafted by the legendary Sekiya Brewery, nestled perfectly between Tokyo and Osaka. With over 160 years of history, they’re now one of Japan’s most innovative Sake producers—proof that you can teach an old brewery some new tricks! They grow their own rice—about 42 hectares of it—specifically suited to their mountainous home. After two decades of collaboration with the local agricultural bureau, they developed Yumesansui, a rice variety that thrives in the region’s cool nights and high altitudes (700m above sea level, to be precise). Their other secret ingredient? Water. Sourced from the mountains, it’s some of the softest in Japan, with zero magnesium or calcium, giving their Sake that beautifully smooth, “soft” mouthfeel.
