Winemaker Peter Mackey deliberately dialled back the winemaking influence on this Chardonnay to make for something with real finesse and delicacy. He's delivered us an ultra-refined and vibrant style of modern Yarra Valley Chardonnay, too, all green apples and whipped butter with a very crisp and minerally profile that is rounded out with just a little grilled nut creaminess.

Founded in 1998, Hirsch Hill Estate is owned by the Hirsch Family and located in the cooler northern part of the utterly picturesque Yarra Valley. Wine wasn't their first passion, but they've taken to it quickly! The vineyard is part of a horse stud, where the Hirsch’s breed racehorses are trained at Caulfield. What a combo for Race Week! When they are not breeding and racing horses, they explore new vineyard practices and engage some of the region's top winemakers to fashion their wines. The Hirsch’s have 12.5 hectares of vines planted mainly to Pinot Noir, but also Chardonnay, Sauvignon Blanc, Viognier, Shiraz, Merlot and Cabernet. All the grapes are estate-grown and hand-harvested, ensuring full control over the entire winemaking process. In the last few years, local legend Rob Dolan has handed over the winemaking reins to Peter Mackey, who now aims to craft wines that have Yarra expression with a sense of delicacy.

Ultra-refined and minerally Chardonnay like this wine from Hirsch Hill is actually a wonder in the pairing department, as the combination of lightness and creaminess offers up all sorts of textural contrasts. Raw or grilled seafood is a first choice, as are dishes that include feta or goat's cheese as a key ingredient. We especially enjoy this with fish soup and creamy pasta, but it will pair with so many dishes and cuisines that it's worth experimenting! A note also to not drink it too cold as you might risk turning down the flavours too much.
