As it says on the tin, this Koshu comes from the Toriibira Vineyard, which sits at 450m above sea level in the Mt Fuji foothills. Fermented in oak barrels, but matured in tanks, this stony, minerally and rather beautiful crisp white has delicacy and an endless pure stream of grapefruit and green melon tangy fruit.

And Grace Vineyards, named after the Three Graces of ancient Greek mythology, is one of Japan's most recognisable wineries, with a winemaking history that dates back over a century. With its minerally and delicate profile, this unique Japanese wine really commands a light touch on the table or else the refined flavours get drowned out. Raw seafood, fresh salads, white meat and white fish are the natural goto choices here, with salmon yakitori and ponzy oysters a particular treat. Best served cold but not icy, and ideally in big glasses so you can really pick up the subtle aromas and flavours.
