This is made from mostly Chardonnay, with a little dash of Pinot Noir adding richness to the blend. It spends 12 months resting on lees to add depth and creaminess, and offers a lovely soft palate with a multitude of flavours. Look out for lemon curd, hay, honey, crushed almonds and a touch of salt. Crackling acidity and freshness. Excellent stuff.
Frédéric Lambert is a native of the small eastern French region of the Jura, and a wine industry veteran, having worked for the regional wine board for more than 10 years before setting up his own operation in 2003. Thus, he knows the region, soils and vines of the Jura very well! He started buying vineyards around the town of Toulouse-le-Château in 1993 before starting his label, and has been a proponent of organic vineyard practices from the very beginning. His wife Marie-Anne now works full time with Frédéric, and their domaine is going from strength to strength, buying more vineyards and refining their work. Grape yields are always kept very low and it shows in the intensity and length of flavour in the wines. Their cellar is a place of careful and meticulous work, and sits in the old honey factory in the town of Toulouse. Production is now around 15000 bottles a year, but they are continuing to expand, especially with an extra set of hands from their son Romain, who has recently finished his winemaking studies!
