This is a serious Pinot Noir with plenty of red fruited flavours balanced by a touch of oak and plenty of savoury complexity. Along with the fancy outfit and big wine glasses, this would sit nicely with a Burgundian classic dish like Coq au vin.
The Carillon name in Burgundy has been around since the 1600s with a long history that continued as one winery until recently when François and his brother Jacques split the winery holdings and created two separate labels. Their father, Louis, was arguably one of the best winemakers of all time in their region of Puligny, famous for some of the most sought after Chardonnay in the world. François has a focused approach to his winemaking with rich styles that still have a chiselled and poised balance that makes them sought after all over the world. These are largely wines that are hard to come across and due to the reputation of the Carillon name amongst Burgundy fans, they are snapped up quickly. Today, François produces 18 different wines of varying quantities from across the villages of Puligny-Montrachet, Chassagne-Montrachet and Saint-Aubin.

Burgundy is located east between Paris and the Swiss border and is known for producing some of the finest and most sought-after wines (Chardonnay and Pinot Noir) in the world.
