Details
Sure, indigenous to Georgia, but has found a new home in some of the warmer areas of Australia. This example is a black/violet in the glass and offers up rich, brambly purple fruits and a mix of tar, rose petal and pen ink. Suitably rich but with wonderful balance, this is a great cool-weather drink.
Origin: Zemo Kartli, Georgia Mainly Grown In: Georgia, Ukraine, Moldova Key Facts: Saperavi is the hero grape of Georgia and known for making truly heroic wines. Famously, Saperavi is what's known as a 'teinturier' grape which means that it has dark skin and dark flesh. No surprise that it makes some seriously dark-coloured reds! Saperavi is known for its high acidity and high tannins, so it typically makes wines with awesome colour, great freshness and real heart. Modern Saperavi can also be made into a more fun style with all the dark colour and richness but with a lighter touch - so you end up with these berry-laden purple wines of real delight. Fun Fact: Saperavi is the Georgian word for 'dye'. Perfect for a grape known for seriously inky wines!

Pairing guide
The more we give Saperavi wines a whirl, the more we’re convinced this variety is set to be the next big thing. This release from Fox Tales proves just how well Saperavi vines thrive in South Australian soils, and it’s an absolute champ for pairing with some seriously tasty dishes. Dark and juicy meats like lamb and duck are where it’s at - especially if lifted by plenty of garlic and warming spices. Grilled chicken thighs, steak with truffle sauce, wild mushrooms and earthy ingredients like beetroot and walnut will also hit the high notes. What’s not to love?

Wine region

Limestone Coast, Australia
The Limestone Coast is a large wine zone in the south-east of South Australia which has six wine regions that comprise the Limestone Coast; Coonawarra, Mount Benson, Mount Gambier, Padthaway, Robe and Wrattonbully. The Limestone Coast is in a unique position with cool winds and ocean waters throughout the summer months thanks to an oceanic event called the Bonney Upwelling which helps keep the vineyards cool during the hot summer months. The Limestone Coast produces a wide range of quality wines from classic Cabernet Sauvignon and Shiraz in Coonawarra to cool-climate varieties like Chardonnay and Pinot Noir in Robe and Mount Gambier. It is truly a versatile area and one of the backbones of the Australian wine industry.
